A Resort Girl Tale of Oxtail Stew

The low country did not get the big snow, but the temperatures did dip low.  And to keep warm, this Resort Girl craved some southern comfort food.  Are you a Resort Girl or Guy craving authentic southern comfort food to melt away cold winter days, too? Maybe a pot of oxtail stew will do for you.

Why oxtail? Well, here begins the trail of this tale of oxtail stew:

Recently, I was reading an excellent article in “the Bluff”– the magazine for Palmetto Bluff Plantation mentioning a local small grocery/meat market. Since this Resort Girl recently discovered she likes to cook southern gourmet, I put this spot, Scotts Market, as a stop on my afternoon vacay in Bluffton, S.C. to check out the goods.  As the Bluff article mentioned, Scotts Market has been referred to as “a State of Mind” and is known for carrying the finest cuts of organic and grass-fed beef as well as a wide selection of fresh produce.

Many times, my car cruised by the quaint shopping center in downtown Bluffton and I noticed their signature sign. It has always caught my eye with its authentic design– like a blast from the past. And according to the article, the sign design is from the original 1970s-era store.

Upon entering the market that afternoon, I felt like it was a throwback to the old days of warm country grocery stores. Your name was known, your tastes were noted and service was delivered with a wide smile.

As I peeked into the variety-filled meat cooler, I spotted the store’s third generation owner, Adam Simoneaux, behind the counter. Adam was artfully trimming some meat. A customer came up beside me and asked Adam just what he recommended on this cold winter day.

“A pot of Oxtail Stew,” he quickly answered.

I looked back in the cooler and there sat the plump package of oxtails, which I had never seen before in my life. My mind went on to imagine just what that hot pot of oxtail stew might taste like on this winter night.

I did pass on buying the oxtail that afternoon as this kind of stew is new to me. But, I have been researching ways to fix up some oxtails. First, the meat is generally a cow tail that is cut up into pieces. I can image how Adam’s expertise comes into play when chopping them up. And there is much you can do besides cooking up stew, but a hot pot is what makes my mouth water the most.

So how will this tale end? With my new oxtail knowledge in hand, this Resort Girl plans to go back to Scotts and buy a package of those oxtails…and make me up a pot of stew!

The fire pit

Is lit

The chairs are ready

My hands are steady

The mood is mellow

And there sits a white fluffy marshmallow

Ready for my wooden stick

My lips are eager in anticipation

waiting to taste the delicious

Burnt gooey edges

As the melted marshmallow wedges

Between the thick dark chocolate slice

And crispy graham crackers…

Finally, the warm gooey bite

Then my mind lingers back to the night

And the warmth of the fire and dear

Friends who are near

Oh how I wish to enjoy this moment some more

The Beauty of Winter Trees Intrigues Resort Girl

What intrigues this Resort Girl about the winter trees?   All you see is the skeleton of the tree – the spirit of its magnificent beauty. It is the time when their inner beauty gets to shine.

Bare branches twist and turn in such glorious natural art forms.  Some winter trees wind in symmetry with branches and dried bulbs, all equally aligned.

Other limbs twist and turn to intertwine, forming abstract images. These winter tree lines are so fine against the crystal blue skies. And some trees whisper tiny tunes as their branches sway in the winter winds.  Others limbs hold strong while dripped in gleaming layers of ice crystals while other fragile branches are kept warm by moss-wrapped mittens

Though some winter trees stay lush and green, this natural phenomenon offers a setting of color contrast against the bare winter tree- like the tiny brown bulb clusters on the crepe myrtle set against lush evergreen leaves. Adding in a few early azalea blossoms, these scenes are masterpieces of natural art.

And as with the tree, we all go through seasons.  Soon arrives bountiful spring and summer…when our eyes get to enjoy the lush deep green leaves mixed in a multitude of bright blossoms.

But this Resort Girl loves to wander amongst the winter trees.  And delight in their inner beauty against the bold winter sky.

Being a Resort Girl and Guy means your life is filled with destinations. Some may just be in your mind, others in your heart, and many using your bodies.

It may mean reading an exotic article about a far-away place for a few moments of escape or a quick day vacay to a local public garden to smell the roses or a quick visit to a local river or lake for a dip.

Resort Girl Destinations

It may mean a weekend escape to the mountains for a spiritual retreat, a seaside exercise class, or even a plane or boat trip to explore a new destination and culture.

They are all equally fulfilling in a life of adventure—mind, body and soul explorations. It is a life lived on one continual journey exploring your physical and mental abilities while enjoying and living gracefully with nature.

A Resort Girl and Guy’s passport and mind become filled with stamps of adventure, new faces and new places. Your eyes open up to new ideas and cultures. And your heart becomes protective of nature’s creatures and beauty….as you want to keep those natural treasures thriving and alive.

Resort Girls and Guys, when setting your RG Life Plan 2016 goals, include destinations of the mind, body and soul. They all make excellent destinations for your life-long journey of adventure.

Resort Girls set goals instead of making resolutions

Resort Girls have a positive outlook for their lives, and, at year-end make goals instead of resolutions. Goals are defined as the object of a person’s ambition or effort; an aim or desired result. And that is what Resort Girls are aiming to do…

Live a Beautiful and Meaningful Life.

Therefore, at this time of year, Resort Girls (and even our Guys) review their life plans to set goals for 2016. And as one of my favorite and respected motivational speakers, Jim Rohn, “Success is steady progress toward one’s personal goals.”

As most RG and Gs are into some type of sport or competitive adventure, we are well aware of how to set goals to win the game or make it to the finish line. It takes both training AND thinking. Training your body to finish the game and thinking positively… even when faced with potential defeat.

It never fails to amaze me how when the top athletes have a bad performing game, when interviewed afterward, they turn it around by pointing out the good plays. They do not say, “Oh, yes I need to do better in this or that,” as with resolutions. Instead, these pros say something positive about one of their skills like, “Did I not have a great putt on that number 16 hole?”

Aren’t many of us just waiting for these players to voice the negative? Winners stay positive. It is their positive personal philosophy—their mind processes the overall performance, but has been trained to think and remain positive. They also know what to do to make their performance better next time.

Building a perfect Resort Girl and Guy life is the same way. As Mr. Rohn also states, “You cannot change your destination overnight, but you can change your direction overnight.”

Resort Girls and Guys, set goals to build their Perfect RG Life Plan— life destination. Not sure how to get started? Begin by asking yourself some of the following questions to set some direction:

  • Where do I see myself at the end of 2016 and in 5 years?
  • What is my life Plan to get there? And what can I accomplish in 2016?
  • Do I need a Partner? Is this the year or maybe not?
  • What are the pieces necessary to Produce my lifestyle? Is 2016 a year for a major or minor piece?
  • What do I need to/or not Purchase to achieve it? Is it time for a big purchase or sale?
  • What is my unique Purpose? Keep refining this, as with shifts in direction this may also shift as well.
